You know how it is.

It’s past midnight and you get a sudden craving for some tasty baked what-evers.

So you grab your favorite recipe, rush to the pantry, and start schlepping ingredients into a mixing bowl… but then…

You find out you’re MISSING that critical ingredient!

Here’s a few hacks to get you through that “got-a-hankerin’” baking crisis.

Missing Baking Soda

Try baking powder – just use 4 times the amount of Baking Soda the recipe calls for, you’ll be good.

Missing Baking Powder

Out of luck on the Baking Powder front? No problem, if the recipe isn’t based on a lot of rising (for example, as you would get with pancakes), then use Club Soda as the liquid in your recipe.

Missing Corn Syrup

A couple alternatives to Corn Syrup would be maple-flavored syrup (it’s made from corn syrup, giving you a leg up) or if the slight maple flavor just wouldn’t work for you, then just use honey.

Missing Eggs

Who hasn’t run out of eggs? And their use in baking is practically legendary. But sometimes you’ve just gotta improvise and when that happens, try unsweetened applesauce.  If you only have sweetened, then go for it but then reduce the amount of sugar in your recipe.  Figure on about ¼ cup of applesauce per egg.

Mayonnaise is also a good backup plan – it’s made from eggs and 3 tablespoons of mayo per egg should do the trick.

Of course, keeping that pantry and fridge fully stocked is the best way to make sure you’re always ready for the Midnight Munchies.
